Coconut Lime Energy Bites

  • 1 cup raw cashews
  • 2/3 cup unsweetened shredded coconut fine
  • 1 cup packed pitted dates soak in warm water first if very dry
  • 2 tbsp fresh lime juice
  • 1 tsp fresh grated lime zest


  • Place the cashews in a food processor and mix until well chopped.
  • Add the dates and mix in the food processor until a dough forms.
  • Add the coconut, lime juice and lime zest and process until well mixed.
  • Roll dough into balls and enjoy!


Store in the fridge for 5-7 days
