  • 4 cups chicken stock
  • 4 whole Italian Chicken Sausages From Trader Joe’s Spicy
  • 3 cups kale chopped
  • 1/2 whole onion diced
  • 1 bag small tri-color potatoes from Trader Joes
  • 1 can low fat coconut milk refrigerated
  • salt
  • Pepper


  • Cut chicken sausages into small pieces and brown on stovetop for 8-10 minutes
  • Chop small potatoes into halves then add into crockpot with diced onion and chicken stock
  • Add the cooked chicken sausage into crockpot and set the crockpot on low for 8 hours
  • Add the kale into the crockpot and cook for another 30 minutes on low
  • Before eating, add the thickened portion of the coconut milk to the crockpot and stir (you can save the rest of coconut milk for another use)
  • Add salt and pepper to taste and enjoy!
