With a combination of complex and simple carbs along with some healthy fats, these energy bites are the perfect mid morning or afternoon pick me up!
Super Food Energy Bites
- 1 cup rolled oats
- .5 cup peanut butter
- 1 TBSP chia seeds
- .5 cup ground flax
- 1/3 cup honey
- .5 cup dark chocolate chips
- 1 tbsp pure vanilla extract
- .5 cup unsweetened shredded coconut
- Pour all ingredients into a large mixing bowl and stir using rubber spatula.
- Using your hands, form 12 1/2" balls.
- Place in an airtight container and store in the refrigerator.
